Well, the monsters we've dealt with had an internal toxic blood called Kaiju Blue that pretty much salted the earth and killed everything it touched. Also, they were basically made of silicone, so really inedible.

I'd have to get my hands on some part of them to actually determine whether it'd be edible or not.
